Cucumber cups filled with Snazzy Salmon Mousse
Ingredients:
1 Telegraph Cucumber (the long ones!)
1 tub Snazzy Salmon Mousse
Fresh dill sprigs to garnish
Method:
Trim each end of the cucumber, but do not peel it
Cut the cucumber into two centimeter thick slices
Scoop out the seeds with a teaspoon or melon baller, being sure to not go all the way through or the mousse will fall out!
Pipe or spoon the mousse into the little cups & top with a sprig of dill.
These are lovely & light & perfect as a warm weather appertiser with a chilled glass of white or bubbles or a beer.
